4 Quick, Easy and Balanced Breakfasts

No matter who you are, breakfast is still the most important meal. What you eat for breakfast determines how you will approach the rest of you day. If you wake up starving and eat a huge carb-rich breakfast, you may end up crashing at 11am or even need a nap.(Try having two glasses of water when you first wake up. Most of the time when you wake up ravished, it's because you're body is in need of H20.) On the other hand, if you decide to skip breakfast you are more likely to overeat or eating something unhealthy later. Below are four of my favorite fast and easy breakfasts that will balance your blood sugar, satiate your stomach and put a pep in your step...enjoy!

1) Banana and Blueberry or Acai, Almond Milk and Walnut Smoothie: serves 2 people

-Add 1 frozen or unfrozen banana, ¾ cups of  (organic frozen) blueberries or 1 packet of frozen acai into a blender
-Fill the blender with organic almond milk to the top of the fruit line
-Pour in 1/4 cup of water
-Add a handful of raw walnuts to the blender
-Blend until smooth
Tip: Its great to drink on your way to work when you’re in a hurry. If you’re only making the smoothie for yourself, bring the other serving with you for a mid day treat.

2) Oatmeal: 1 serving per person

-I prefer “Country Choice”, multigrain organic oats…inexpensive and delicious        
- Cook it on the stove with water until the oats become creamy (microwaving kills all of the nutrients)
- Once you turn off the burner, stir in a small handful of raw walnuts or almond slices and a splash of organic almond milk
-Sprinkle cinnamon on top. If you like it sweet, add a dollop honey or maple syrup
Tip: Its nice to eat oatmeal on a cold morning!  If you want it creamier, add ghee or a small slice of unpasteurized grass fed butter.

3) Hard/Soft Boiled Eggs: 1 large egg per person or 2 if you’re hungry

-Try to buy your eggs at a local farmers market or opt for hormone free and organic 
-Make sure the egg is at room temperature before placing it in the boiling water. If you keep your eggs in the refrigerator, place them in warm water or leave them out for 20 min until they reach room temperature.
-If you put the raw egg in the water and it floats, throw it out…its way too old!
-For soft boiled cook for 6 minutes 
-For medium boiled cook for 9 minutes
-For hardboiled cook for 13 minutes
Tip: Bring it with you when you’re on the go. Bring two with you and eat one on a salad for lunch.

4) Not a Fan of Breakfast?

-Try eating 1 or 2 tangerines or ½ of orange, and 2 hand-full of raw walnuts or raw almonds
-You’ll get both Vitamin C, fat and protein if just a few bites
Tip: Its best to eat fruit in the morning, so that you can use and metabolize the natural sugars before bed. Eat your fruits rather then juicing them in order to get all nutrients and fiber.
