It is not often that a girl is able to stay on her "wedding diet", yet still have a super decadent dessert that will satisfy her sweet tooth! The answer: Raw Vegan Date Truffles! My bastes (yes, bastes, not to be confused with bests) treated me to these tasty little morsels this past weekend and all I can say is, "Thank you, Bastes!" Bonus: in moderation, raw cacao can be beneficial to the body. It has been linked to reducing cataracts, improving heart function and alleviating stress. It is here that I will share the recipe with you all:
Ingredients (makes around 35):
~ 3 cups of pitted dates
~ 10 Tbsp raw cacao powder
~ 8 Tbsp unsweetened shredded coconut
1. Put all ingredients in a food processor until almost smooth (add a little water if it is too dry).
2. Scoop tsp size scoops of date mixture. and roll into a ball.
3. Let them rest in the refrigerator for at least a few hours but they can be made up to a week ahead.
*My baste, Lauren, made three different varieties (all 'amazeballs', no pun intended)...
~ Coconut: shove a raw almond in the middle of the date ball and then roll it into raw coconut flakes.
~ Sesame: roll date ball in sesame seeds.
~ Hazelnut: shove toasted hazelnuts into date ball and then roll in raw cacao.
