Now that the holidays are here it's time to start spreading cheer with happy wishes, loving gifts and delicious baked goods. Ok, I'll be the first one to admit that I don't bake. It's not that I don't enjoy the process, I just don't trust myself (or my husband) around those addictive and delightful pastries.  Also, I wouldn't want to reverse all of the healthy eating, exercise and nursing it took me to get back to my pre-baby weight. That's why I found the best of both worlds... a muffin that's mouth watering but also gluten-free, soy free, nutritionally balanced, made with organic ingredients, low calorie, and slightly sweet. CRANBERRY ORANGE

Makes approximately 15 muffins
4 cups OatPro3
4 eggs
4 cups almond milk
1 cup maple syrup
1/2 cup coconut oil plus 2 Tablespoons
4 teaspoons baking powder
pinch of salt
4 teaspoons of vanilla extract
zest and juice of 7 oranges
dried cranberries, to taste

Whisk everything together vigorously- put in the coconut oil last so that it doesn't harden due to the other ingredients being cold. Bake at 350-375 until cooked. This should be approximately 20-25 minutes depending on your oven. Let cool for about 10-20 minutes and enjoy!!
