Vegan Cauliflower Soup
Cauliflower is one of the most nutrient dense and delicious of all the fall veggies...and in my opinion (or at least in my house) generally falls by the wayside. I woke up the other day with what felt like the start of a sore throat and was craving something soothing, but filling. As I perused the veggie section in the market, that white, unforgotten gem of cauliflower was calling my name. With fall just around the corner I thought what a better time to make a something with this lovely cruciferous vegetable. Cauliflower Soup is packed with taste, nutritious and super easy to make. Being that the cauliflower is an excellent source of vitamin C, vitamin K, folate, pantothenic acid, and vitamin B6 you can nosh on a few bowls of the below recipe...guilt free! In addition, cauliflower is is jam packed with fiber, omega-3's, manganese, phosphorus, and biotin AND it is a good source of vitamin B2, protein, vitamin B1, niacin, and magnesium...WINNING! Ingredients: olive oil florets of 1 large head of cauliflower 3 garlic cloves (minced) 1 large yellow onion (chopped) 3 garlic cloves 1 russet potato (diced) 1/4 cup raw cashews 6 cups vegetable stock 2 teaspoons paprika salt pepper parsley or chives for garnish
Directions: 1. In a saucepan, heat 2 tablespoons of olive oil, add chopped onion and minced garlic. Cook until translucent. 2. Place the cauliflower florets and diced potato into the saucepan with the onions and garlic and give it a little stir. 3. Now add your vegetable stock and bring to the boil. 4. Add a few pinches of salt, a few dashes of pepper and paprika. 5. Cover the soup and simmer for 15-20 minutes, or until the cauliflower is soft. 6. Take your mixture, pour into Vitamix. Add cashews and blend your heart out. 7. Turn off blender and taste. Add more salt, pepper or paprika to your liking. 8. Pour into soup bowls, season with cracked black pepper and top with a garnish of parsley or chives and/or a dash of olive oil.
