Don't hog the nog!

veganeggnoggIt's the most wonderful time of the year! Holiday magic is all around us! What better way to celebrate than with a nice big cup of eggnog!? Traditional eggnog is made with milk or cream, raw eggs, spices like cinnamon, vanilla, and nutmeg. Drink it hot or cold, depending on your liking, and serve it spiked or virgin, depending on your preference.

I love me some traditional eggnog; I cannot lie. But this "most wonderful time of the year," is also "they heaviest eating time of the year." This means that I usually decide to skip the eggnog because I'm eating plenty of fat and sugar as it is.

If you're in the same boat and but you don't want to skip the nog, this recipe is for you! The cashews and coconut milk make this oh so creamy and luxurious, while the dates and maple syrup add just the right amount of sweet. And since we are having our nog with these healthy fats and better choice sweeteners, I say go ahead and add some spirits... to get you in the spirit! It's great with bourbon, rum, or my current favorite, cognac.

Sipping on this delightful treat will make you feel as if you were getting a warm hug from Saint Nick himself!

Serves 4 Ingredients: 1 c raw, unsalted cashews (soaked overnight then drained) 2 c water 1 can full fat coconut milk 4 Medjool dates, pitted and soaked overnight then drained) 1/3 c maple syrup 1/2 tsp cinnamon 1/2 tsp nutmeg 1/2 vanilla bean (just the seeds scraped out) 1/4 tsp salt

Directions: Place the cashews and water in a blender and blend away until super smooth. Then add remaining ingredients and keep on blending. It takes a little while to get the dates to fully break down, it took my Vitamix about 5 minutes to reach the desired consistency. Serve it warm or cold, with or without booze, and garnish with some freshly grated nutmeg, a cinnamon stick, or a star anise! Happy merry everyone!
