Looking for a pasta sauce that doesn't make you feel like you have strayed off your healthy eating regime? By making a sauce that is loaded with veggies, you can eat one of your favorite, most comforting meals without feeling guilty...and the kids will love it too! The great thing about this recipe is that you don't have to spend a ton of time chopping...just toss it all in a pot, let it simmer and blend it up! I assure you, the flavor will speak for itself. This recipe also doubles as a super tasty and vitamin rich tomato soup! Win.

Ingredients:
~ 4 garlic cloves
~ 1 whole yellow onion
~ 3 peeled carrots
~ 1 red pepper
~ handful of parsley (or more...for added greens)
~ 2 tablespoons olive oil
~ ground pepper to taste
~ salt to taste
~ a pinch of Herbs de Provence 
...and anything else you like in your sauce!

Directions:

1. Wash veggies. Chop veggies. Saute veggies in olive oil for 15-30 minutes on medium heat.  

*For added spice, use hot peppers! We love this stuff:
2. Blend veggies. Pour back into pot to simmer a bit longer. 
 3. Serve over your favorite grain. We like brown rice pasta.
A hearty, healthy, easy and gluten free dish that the whole family will enjoy. Done and done!
