Green Cleansing Soup

It's the day after Thanksgiving, the perfect day for...sweatpants and soup. If you are anything like me, you reserved yesterday as an excuse to eat your heart out. Why not give your digestive system the gift of a break AND use all of those leftover green veggies in your fridge? Win, win! Soups are not only convenient, they’re one of the best ways to maximize the amount of nutrients your body intakes. Since the vegetables are blended, digestion is easier, allowing you to consume more of these enriched ingredients as opposed to something you have to chew. This recipe is just one of many combinations you can create; so be creative and try a variety of ingredients to find what soup suits you best. And because there is no meat or dairy, this soup can be enjoyed over several days without quickly spoiling. This easy detox soup can be thin or thick, depending upon the amount of water/almond milk that you add. Cleansing-Green-SoupIngredients: 2 heads of broccoli, cut up florets 2 zucchini chopped 1 tablespoon olive oil 2 cloves of garlic, chopped 1 white onion diced 1 inch of fresh ginger, peeled and chopped 2 carrots, peeled, chopped 1 cup fresh parsley, roughly chopped filtered water 2 ribs of celery, trimmed, chopped 3/4 cup almond milk 1 lemon, juiced sea salt ground pepper

Directions: 1. Using a large soup pot, heat the olive oil over medium heat. Stir in the garlic, onion, ginger, carrot and celery and cook still translucent. 2. Add the broccoli, parsley, and zucchini. Stir all the veggies, and let cook for a minute or two. 3. Add just enough water to cover the vegetables. You can always thin the soup later, if you need to. 4. Bring the water or vegetable stock to a boil, cover the pot, and reduce the heat to a medium heat and let simmer for ten minutes ~ just so the veggies get soft. 5. Carefully (it will be hot!) add your veggies to a blender. Use the water from the pot to fill blender 3/4 way full and almond milk to fill another 3/4 (leaving the veggies only about 1/2 of the way submersed in liquid). Season with salt and pepper to personal taste. 6. Blend away...and enjoy the calming, cleansing and digestive benefits of this beautiful, nutritious green vegetable soup!
