Noodle free pad thai!
Pad thai is one of my favorite dishes! But sometimes I want the flavors, without the heaviness that comes with eating a tub of noodles. (ya I can't help myself) This recipe for noodle-free pad thai is so delicious you won’t even notice there’s not a noodle in sight. Feel free to use your favorite veggies that can mimic a noodle. I love to julienne carrot and zucchini, daikon radish, and throw in some bean sprouts. This is also excellent with spaghetti squash. Whatever makes you happy, really. I also added tofu for some protein but feel free to switch that out for shrimp, chicken etc. There are no rules when it comes to making your perfect pad thai. Get creative with it! The only thing truly important thing here is the sauce. The secret’s in the sauce...as they say! That is what will ultimately take your veggie medley to next level pad thai.
Because this dish is mainly comprised of nourishing vegetables and some lean protein, you don’t have to feel guilty about eating the whole tub of pad thai!
Serves 4 Ingredients: 1 zucchini, julienned 4 carrots, julienned 1 daikon radish, julienned 1 c bean sprouts 6 green onions, diced ¼ c toasted sesame seeds, white or black handful of fresh cilantro 12 oz of extra firm tofu, fried ¼ c crunchy peanut butter (make sure you are using a PB with low sugar!) 2 Tbsp tamari sauce 1 Tbsp honey 3 Tbsp fresh squeezed lime juice 1 Tbsp water (more to thin out) ½ tsp red pepper flakes (optional)
Directions: In a small bowl, whisk together the peanut butter, tamari, honey, lime juice, red pepper flakes (if using) and water. Set aside. In a large bowl, combine all your julienned veggies, green onions, and sesame seeds. Toss with peanut sauce and top with tofu and cilantro. Enjoy!
