Paul's Amazing Chocolate Chip Cookies...

...need I say more? Let's be serious, sometimes you just need something sweet. It is the perfect time of the year to treat yourself (or someone you love) to the gift of organic baked goods (in moderation of course). My creative brother, Paul, has been in the kitchen perfecting his recipe for the delicious wonderful thing we all know as the chocolate chip cookie ~ and today I will share with you his recipe. These cookies have the excellent, balanced combination of crunch, chew and softness going on...and they are made from rather wholesome and healthier ingredients, all organic. Read on and get baking...and then find yourself a cozy nook to curl up in and indulge in a sweet treat...and then maybe go for a walk. Balance! IMG_0005Ingredients: 1 cup palm oil 1 teaspoon salt 1 teaspoon baking soda 2 teaspoons vanilla extract (Paul makes his own. You can find a similar recipe by clicking HERE) 2 eggs 3/4 cup light brown sugar 3/4 cup coconut palm sugar 12 ounces mini vegan chocolate chips 1 cup rye flour 1 cup all purpose flour

Directions: 1. Combine palm oil, eggs, vanilla, and brown & coconut sugars into a large mixing bowl and whisk together. 2. Take your dry ingredients (salt, baking soda and rye & all purpose flour) and add to the same mixing bowl. 3. Once nicely stirred and smooth, evenly fold your chocolate chips into the mix. 4. Using large spoonfuls, drop dough onto ungreased baking sheets ~ leaving about 1 inch in between each dough ball. Super lightly, press down on each dough ball with the back of a spoon so that they aren't a perfect ball. 5. Bake for 10 minutes. Let cool. Enjoy!
