Pie For Everyone!!!

Summer is here and in full effect! With that come lots of summer festivities including the infamous BBQ. It can be a difficult desicion on what to bring when the host says,“Just bring a dessert”.You have to factor in dietary needs, waistlines and of course you still want it to taste delish! What better to make? A blueberry vegan pie! It’s a fairly simple and unique way to share one of America’s top 10 desserts with a crowd and still be able to please your vegan best friend! And, it’s healthy, right?? Well…okay…it is still dessert and by definition of dessert: 

1. (Cookery) the sweet, usually last course of a meal
Either way, I say enjoy the finer things in life, and just add a little extra time and effort into your daily workout routine to make up for it!

Pie Crust (I found this recipe on Bon Appetite's website and just tweaked it a tiny bit by adding a few additional spices):
2 teaspoons coconut oil
2 cups almonds
5 tablespoons agave syrup (nectar), divided
2 tablespoons whole wheat flour
1 teaspoon ground ginger
1 teaspoon cinnamon
½ teaspoon clove
1/2 teaspoon sea salt

Lightly brush a pie pan with coconut oil and dust with a pinch of flour. Preheat oven to 350°. Add nuts to the food processor and pulse until coarsely ground. Add 3 Tbsp. agave syrup, flour, cinnamon, clove, ginger, salt, and 2 tsp. coconut oil. Process until coarse dough forms. Remove and gather into a ball. Press firmly into pie pan and up the sides using a fork to give texture and grip. Bake crust until golden around edges (about 8 minutes). Let cool in pan on a wire rack and start your filling:

Filling:
¾ cup organic silken tofu (I like soft – firm also works)
zest from 3 organic lemons
½ cup lemon juice
2 Tbsps organic unbleached All Purpose flour
1 ½ Tbsps cornstarch
1 cup organic sugar

Topping:
1 cup organic blueberries (or any fruit for that matter – strawberries, raspberries, peaches…you name it!)

In food processor or blender, puree the tofu until creamy. Add your sugar and blend another minute or so. Add the lemon zest, juice, flour and cornstarch.  Next, pour the beautiful, yellow mixture into your already prepared crust and bake for about 25 minutes more, until filling is set (I burnt mine a tiny bit - but still tasted great!). Remove and let cool, then refrigerate until ready to serve. 
Top with blueberries (or your favorite fruit) and wow the crowd! Enjoy!
