Trick Or Treat!?! TREATS! Carving pumpkins tonight? Thinking about tossing those orange guts!? Well..don't! Your pumpkins innards are the most nutrient packed parts...so eat em up! Here are a few easy ways to get the party started ~ so turn on the monster mash and get in that kitchen!Pumpkin PureeIngredients: - pumpkin innards - juice from one freshly squeezed lemon - 1 teaspoon baking soda
Directions: 1. Take your freshly removed pumpkin innards (minus the seeds) and steam over high heat for 10 minutes. 2. Add to blender with lemon juice (to keep fresh for longer) and baking soda (to remove any bitterness). 3. Blend on high speed for 1 minute...and voila! Homemade pumpkin puree.Pumpkin Butter Ingredients: - 29 ounces pumpkin puree (see above recipe) - 2 teaspoons ground cinnamon - 2 teaspoons ground ginger - 1 teaspoon ground nutmeg - 1 teaspoon ground cloves - 1 cup coconut sugar - 3/4 cup apple juice
Directions: 1. Place pumpkin puree, sugar, apple juice and spices into large pot. Stir and bring to a boil. 2. Let simmer uncovered for 30 minutes on low heat. Stir frequently. 3. Let cool, stir and help yourself to a smear of the good stuff! 4. Refrigerate and bring out for a lovely brunch treat! (store in a super tight container in your fridge ~ good for 1 week)Spicy Pumpkin Seeds Ingredients: - 1 teaspoon coconut oil - salt - freshly ground pepper - cayenne - nutritional yeast
Directions: 1. Remove seeds from pumpkin and separate from stringy flesh. 2. Rinse under cool water. 3. Boil in salt water for 10 minutes. 4. Remove from water, strain and pour into a large mixing bowl. 5. Toss with coconut oil and an overabundance of salt (lots!!), cayenne, pepper and nutritional yeast. 6. Bake on 350 for 45 minutes. (this varies depending on oven, so just keep an eye on them to make sure they don't burn). 7. Remove from oven. Sprinkle with more salt (ya, I said it), a bit more cayenne and a few more dashes of nutritional yeast. 8. Let cool and enjoy while watching Hocus Pocus! Yummy alone or even over a salad for some extra crunch!
