Spicy Cabbage & Lentil Soup
Let's face it, cabbage gets a bad wrap. I don't really know anyone who says "You know what I'm craving? A big bowl of cabbage!!" Nope, not in my tribe anyways. However, with a chill in the air and more sniffles on the rise, we often look to comforting, healthy foods to brighten our spirits and improve our overall health. Well, look no further, this super easy (and tres vibrant) recipe for Spicy Cabbage & Lentil Soup will put a little pep in your step, clear your head and warm your heart...and here are a few facts as to "why": Cabbage is a cool season annual vegetable and is super hearty and filling, but low in saturated fat and cholesterol and also contains tons of fiber. Jammed with folates to build better DNA and vitamins K & C to fight off inflammation, boost immunity and build stronger bones, eating cabbage is like taking the best and most natural multi vitamin out there (and a whole lot cheaper).
Lentils are easy to cook, low in calories and high in protein, making them an awesome source of nutrients and fuel for vegetarians (and non-vegetarians) alike. Loaded with potassium, calcium, zinc, niacin and vitamin K, and rich in dietary fiber, folate and iron, these powerful legumes will help stabilize blood sugar and increase energy and digestion.
Feel free to add any vegetables, herbs, spices or other ingredients to this recipe...and just use mine as a base. I hope you enjoy this warming soup just as much as I do!
Ingredients: 2 Tablespoons olive oil 1 Tablespoon apple cider vinegar 1 Tablespoon Sriracha sauce (more or less, depending on your tastebuds and love for heat) 6 cups vegetable broth 1 large Cipollini onion 3 cloves garlic 1 small shallot 1 cup green lentils 1 small cabbage (diced into thin strips) 1/2 cup carrots (diced) 1/2 cup celery (diced) 2 Tablespoons fresh parsley (diced) 1 bay leaf 2 teaspoons turmeric 1 teaspoon cayenne pepper 2 Tablespoons Herbs De Provence salt & fresh ground pepper to taste
Directions: 1. Get yourself (or make yourself) some nice vegetable broth. I had time to make my own for this recipe, and it is super simple to make...but no presh, whatever is easy for you and makes you happy...we won't judge. Either way, in a medium saucepan, heat your broth up. 2. In another medium saucepan, heat up your olive oil over medium heat. Add onion, shallot & garlic and sauté until translucent. Add a pinch of salt, bay leaf, Herbs De Provence & apple cider vinegar and stir. Let it all blend together for about 2 minutes or so. 3. Next, add your vegetable broth, carrots, celery, cabbage & Sriracha sauce. Stir. Bring to a boil. Reduce heat and add your cayenne & turmeric. Let sit on low heat for 20 minutes or so. 4. Now stir in your lentils. Bring to a boil. Reduce heat and let sit on low heat for 30 minutes. Remove from heat, add fresh ground pepper & parsley and let sit for a bit...then go ahead and enjoy this delicious, nutritiously (and flavorfully) dense fall meal.Stay warm and healthy pals!
