Need a break from your usual breakfast routine? Well, look no further...savory oatmeal is here! A few years ago, a friend introduced me to this meal. She needed a quick bite that would keep her energized and feeling satisfied for a long period of time without any sugar spikes. After I had a taste, I never looked back.
~ 1 Zucchini (chopped)
~ 1 Leek (chopped)
~ Ponzu Sauce
~ Egg Whites
~ Steel Cut Oats
~ Olive Oil
~ Make the desired amount steel cut oats (I like mine a bit al dente).
~ Sauté leek and zucchini in olive oil and add a dash of salt and pepper.
~ Make egg whites.
~ Add the desired amount of cooked steel cut oats into a bowl.
~ Put cooked egg whites, sautéed leeks and zucchini on top of the cooked oats.
~ Top with desired amount of ponzu sauce......and wallah! Savory delight!
