The Incredible, Edible...Chia Seed!
Just yesterday, a friend made me a super tasty, easy and nourishing breakfast treat (yes, I was trying to stay away from the tempting empty carb that was taunting me). She totally distracted me from that bagel, and gosh, now I am falling in love with the chia seed...and, I think you will too. Chia seeds have been around since 3500 B.C. and have since then become a serious super food! They are gluten-free and loaded with antioxidants (which naturally lengthens their shelf life). There is over 5 grams of fiber, 3 grams of protein and 2.5 grams of omega-3s in every serving...does not get much better than this folks.
All you do is soak the seeds for a few hours in water, coconut milk, almond milk (my friend used homemade almond milk for her recipe), and a super nutrient chia gel forms that you can use as a pudding. My pal added cinnamon and a spot of maple syrup to the chia seed pudding...and voila! Bagel who?
You can also add chia seeds to your yogurt, smoothies and oatmeals for an extra boost of goodness. And, that chia seed gel is a wonderful egg replacement when baking!
