The Proof Is In The Pudding
Okay...picture this:You are having a dinner party and you are trying to come up with the perfect, light dessert to accompany a delicious meal. The problem is that Don is a vegetarian, Peggy is lactose intolerant, Betty (oh, Betty...sigh) is gluten free and Roger only likes two things: his whisky and his chocolate (yes, I may be watching too much Mad Men)...what do you make?! Just then, you hear a knock on the door and guess who it is? Well, it's my Guilt Free Pudding recipe ~ standing there all pretty, ready to save the day. This quick, easy, vegan, gluten-free, dairy-free dessert may be free from a lot, but taste is not one of them. Read on and you shall see for yourself that "the proof is in the pudding"...
Ingredients: 2 Tablespoons raw cacao powder (I just love Navitas Naturals) 1 Tablespoon raw honey (sub maple syrup or agave for vegan guests) 1 banana 1 avocado 1 handful raspberries or strawberries 1 Tablespoon fresh mint (whole leaves or chopped) 1 Tablespoon shredded coconut 1/2 cup unsweetened almond milk
Directions: Add all above ingredients to a blender. Cover. Mix on high speed. Turn off blender and taste your creation. It should taste like a truffle exploded in your mouth. If the pudding needs more sweetening, add a tiny bit more coconut and/or honey, and and if it needs to be smoother add a tiny bit more almond milk (you can always add more...so start slow). You get it. When it's perfect (which should be almost immediately), take a spatula and add into some cute little mugs. Pop those bad boys in the refrigerator and serve em' up when Roger starts to have a hankering for some sweets. Enjoy!
