Vegan chili recipe

Is winter over yet?! Even though our days are slowly getting longer and temperatures are rising, we've still got a ways to go before we can call it spring. Nothing can ease my winter blues like a good bowl of soup, and even more so, a good bowl of chili. This vegan recipe saves on fat and calories without compromising bold chili flavor. It’s also really simple to put together, great for a crowd, and full of protein and fiber.

imageWhat makes this vegan chili a little different than the rest is that I used TVP® (textured vegetable protein). What is TVP® you ask?  TVP® is a defatted soy flour product that is often used as a meat analogue or meat extender. It doesn’t add much flavor but it’s high in protein and contains no fat and will take on the flavor of whatever it’s in. TVP® is also very inexpensive, so if you need protein and fiber on the cheap, this can be a good option for you. I use TVP® from Bob’s Red Mill which is naturally gluten free and is handled and packaged their completely separate, dedicated gluten free facility.

Even though I am a fan of TVP® in this recipe, it is important to be aware that this is a soy product, which I recommend eating sparingly.

Ingredients: 4 Tbsp olive oil 3 small onions, diced 3 cloves garlic, diced 1 tsp red chili flake 1 Tbsp herbs de provence 2 Tbsp paprika 1 Tbsp black pepper 1 Tbsp cumin 1 28 oz can whole peeled tomatoes 1 15 oz can black beans 1 15 oz can red beans 1 15 oz can great northern beans 8 c. water salt to taste 1 c. TVP® (optional)

Instructions: In a large soup pot, saute onions and garlic in olive oil until soft. Add chili flake, herbs de provence, paprika, black pepper, and cumin. Saute 2-3 minutes. Add can of tomatoes and juice from can. Break up the whole tomatoes as you stir into onion mixture. Add all beans and any juice from cans. Add water. Bring to a boil and add TVP®, if using. Allow to simmer on a very low heat at least 2 hours but up to 8 hours. Stir occasionally. Add more water as needed if it reduces too much. Salt to taste. Enjoy!
