When life give you apples...make applesauce!
Hooray! It's apple season! What do you do when you have an overabundance (is that possible??) of this glorious fruit? Well, make applesauce! Here is a recipe for a super simple, super healthy and super delicious treat that is jam packed with fiber and vitamin C to help keep you and your peeps happy and strong all fall long. Enjoy!
Ingredients: - 5 organic apples (I choose 3 Fuji & 2 Granny Smith - click HERE for some apple facts to help you choose!) - 3/4 cup water - 1 Tablespoon cinnamon - 1-2 cinnamon sticks - 1/2 teaspoon nutmeg - 1/4 teaspoon salt - juice of 1 lemon - lemon zest of 1 lemon Directions: 1. Peel and core apples. 2. Dice apples into small, 1 inch (or so) cubes. 3. Add all ingredients to a pot, turn on high heat. Once boiling, reduce heat to low. Let simmer for 45 minutes or so ~ stirring here and there just to make sure apples are getting equal parts love from the heat and that your spices are all mixing together effectively. 4. Once apples are soft, remove pot from heat. Carefully pull out cinnamon stick(s) and mash with fork. 5. Enjoy your applesauce all by itself...super satisfying and naturally sweet! For some added protein, serve warm with fresh fruit and nuts.
