Zucchini Hummus

Quick, light & easy...what summer snacking should be. My favorite go to these days is a twist on the traditional hummus recipe -- this time just add fresh zucchinis and sans the chickpeas. This delicious hummus is creamier, lighter -- and a bit easier to digest (which I think is always better during bathing suit season!).
Ingredients:
4 zucchini (washed thoroughly)
3/4 cup tahini
3 cloves garlic 
1/4 cup olive oil
1 tsp sea salt 
2 Tbs lemon juice
1/2 Tbs ground cumin
1/2 tsp paprika
1/2 tsp cayenne pepper
small handful of fresh parsley
Directions:
In a food processor or blender, combine all of the ingredients and blend until thick and smooth. Tip: Add a little extra olive oil and/or lemon to get it all moving if it seems stuck. 

Scoop creation into a beautiful serving bowl and top with a dash of cayenne or paprika (for color and kick), a few pieces of remaining parsley...and voila! Serve with your favorite veggies, crackers, pita...or use as a salad dressing or alternative to mayo on your sandwich
